Honyaki (本焼) knives are forged from a single piece of steel using the same traditional method as Japanese swords. Unlike laminated knives that combine soft iron and hard steel, honyaki are crafted entirely from one solid block of steel, giving them unmatched sharpness, durability, and distinctive natural patterns on the blade.
Because only the most skilled blacksmiths can produce them, honyaki knives are extremely rare. They are regarded as the “ultimate knife,” valued not only by sushi chefs and Japanese cuisine professionals but also by collectors of fine craftsmanship.
