The Story Behind the Blade
My name is Yoichiro. I restore and sharpen traditional Japanese knives in Kyoto, Japan.
These knives have a story. Some were left behind, some became dull with time. But with careful restoration, each blade can cut even better than when it was new.
In the video above, you can see the difference between a dull knife and one that has been properly sharpened.
A dull knife crushes the food, risking not only the flavor — but also your fingers.
A sharp knife slices effortlessly, preserving both texture and presentation.
Every knife I handle is sharpened by hand, guided by years of experience and the spirit of Kyoto craftsmanship.
It’s not just about the tool — it’s about honoring the work behind it.
My goal is simple: to give old knives a second life, and to share the beauty and precision of Japanese blades with the world.
