Michael is a home cook and knife enthusiast from the United States.
He ordered three knives from Yoichiro Knife: a petty knife, a deba, and a yanagiba.
After using them, he kindly shared his thoughts and photos. He told me that the petty knife has been useful for many tasks, from small vegetable work to slicing meat before plating.
He has also been using the yanagiba for slicing tuna for sushi and other raw fish dishes. That is exactly the kind of work a yanagiba is made for, so it was wonderful to hear.
Michael also mentioned that he had wanted a good deba for a long time, and that he was looking forward to using it to break down an amberjack in the future.
One part of his message was especially meaningful to me. He said that he appreciates having knives that have already shared love through food, rather than simply buying a new knife.
That idea is very close to what Yoichiro Knife is about: giving previously loved Japanese knives a new life in another kitchen.
