Honyaki Yanagiba Knife
The Yanagiba is a long, slender knife designed for slicing sashimi by drawing the blade through the fish from heel to tip.
This item appears to have been carefully used and maintained. The Honyaki engraving remains visible, but the brand engraving has faded through maintenance and can no longer be read. Another Honyaki knife acquired at the same time was from a leading brand, so this may also be a very good knife. It appears to have been well used and is priced considerably lower, making it suitable for those who want to try a Honyaki knife with excellent sharpness and lasting edge retention. The distinctive Honyaki hamon is clearly visible, with a beautiful wave-like pattern. The white water buffalo handle is also in clean condition.
This single-beveled knife is made of carbon steel and offers excellent sharpness.
