Michiba Rokusaburo Mitate Santoku Knife

This is a Mitate series santoku knife designed by Michiba Rokusaburo. The santoku is a versatile all-purpose knife capable of handling meat, fish, and vegetables. Although the engravings have thinned somewhat from maintenance, they remain legible. A core of Hagane steel is sandwiched into the blade. Michiba Rokusaburo is a famous Japanese chef known from television, especially for his work in traditional Japanese cuisine.

The knife has a double-bevel warikomi structure, with a sharp Hagane core clad in stainless-based jigane, combining ease of use with keen sharpness.

It has been sharpened, so it is ready to use immediately upon arrival. Please handle with care when unpacking. The price includes the sharpening fee.

Though somewhat light from care, the blade bears the inscriptions "道場六三郎" (Michiba Rokusaburo) and "みたて" (Mitate), along with stamps.

This Mitate santoku is appealing not only as a practical kitchen knife but also as a piece connected to a renowned Japanese chef, making it enjoyable for fans of Japanese cuisine.
