Kiya Usuba Knife 200mm

This is an Usuba knife by Kiya. Usuba knives are single-bevel Japanese knives used for fine vegetable work such as decorative cuts and katsuramuki (rotary peeling). This piece shows only light darkening on the Hagane and appears to have seen relatively little use; overall, it is in clean condition.

The blade is single-bevel Hagane (carbon steel), providing sharpness and delicate control for detailed work.

The knife has been sharpened and is ready to use immediately upon arrival. Please take care when opening the package. The listed price already includes the sharpening service.

It carries the “木屋” (Kiya) engraving. This Usuba is ideal for cooks who enjoy traditional Japanese vegetable techniques and want precise control for garnishes and fine cuts.

The combination of carbon steel and single-bevel geometry allows for exceptionally thin slices when properly maintained.
