Minamoto Onbou Deba Knife 150mm

This is a Deba knife by Minamoto Onbou. Deba knives are thick-bladed Japanese knives designed for tasks such as removing fish heads and cutting through bones. There is some typical darkening of the Hagane, but the sharpened edge shows a clean silver line. Overall, it is a solidly built knife.

The blade is single-bevel Hagane (carbon steel) with a sharp, powerful cutting feel.

The knife has been sharpened and is ready to use immediately upon arrival. Please take care when opening the package. The listed price already includes the sharpening service.

It carries the engraving “源音房” (Minamoto Onbou), and the handle has a branded mark reading “切味特撰” (Special Select Cutting Performance). This Deba is ideal for preparing fish for sashimi or simmered dishes, giving you confidence when cutting through heads and bones.

Its sturdy build and sharp edge make it a reliable workhorse in both home and professional kitchens that focus on fish.
