Masamoto Mi-Oroshi Knife 180mm

This is a Mi-Oroshi knife by Masamoto. Mi-Oroshi knives combine characteristics of both Deba and Yanagiba, making them suitable for filleting fish and then slicing it into portions. This is a slightly slim Masamoto-brand Deba-style blade with a beautiful water buffalo horn handle.

The knife is single-bevel Hagane (carbon steel) with a very sharp cutting edge.

The knife has been sharpened and is ready to use immediately upon arrival. Please take care when opening the package. The listed price already includes the sharpening service.

It bears engravings “登録” (Registered), “正本” (Masamoto), and “秀” (Shu), with “秀” also marked on the end of the handle. This Mi-Oroshi is ideal for processing whole fish from start to finish—breaking them down and slicing portions for sashimi or sushi in one tool.

Its slim profile and single-bevel edge make it particularly attractive to sushi chefs and serious home cooks who value precise fish work.
