Kikumoto Yanagiba Knife 285mm

This is a Yanagiba knife by Kikumoto. Yanagiba knives are traditional Japanese blades designed to slice sashimi in a single smooth pull, creating beautifully clean surfaces. In our workshop we have not applied additional sharpening to this piece; it was already sharpened and the blade has become somewhat thin, suggesting it has been carefully used and maintained over time.

The knife has a single-bevel Hagane (carbon steel) blade with a sharp cutting edge, and a water buffalo horn handle that gives it a high-end appearance.

It bears the inscription “本家 菊元” (Honke Kikumoto). This Yanagiba is ideal for preparing sashimi and sushi toppings at a sushi counter or at home, especially for users who appreciate the feel of a well-aged, carefully maintained blade.

Its slim profile makes it particularly suitable for fine, precise slicing of fish loins into elegant sashimi portions.
