Sugimoto Tako-Hiki Knife

The Tako-Hiki is a sashimi knife in the Kanto style, also called the straight Yanagiba, designed for smooth slicing of sashimi. This knife is single-beveled, forged from high-carbon Aogami (Blue Steel), and remains unused or nearly unused in storage. It includes a buffalo horn handle sticker in pristine condition. Please note that the box may have some damage.

The knife has been sharpened, so it is ready to use immediately upon arrival. Please handle with care when unpacking. The price includes the sharpening fee.

It features engravings "杉本" (Sugimoto) and "青紙鋼" (Aogami Steel).

A traditional sushi chef’s knife, this Sugimoto Tako-Hiki provides exceptional sharpness and control for sashimi preparation.
