Azuma Minamoto Masahisa honesuki.
A honesuki is used to separate meat from bone and to break down poultry and work around joints, sinew, and bones. It has an almost entirely single-bevel edge, and we preserved that profile. The bevel ratio is over 90:10. The reverse side was sharpened only very lightly and without adding an angle.
The black areas of the blade have been given a black oxide finish.
A black oxide finish forms a stable oxide layer on the iron surface, helping to inhibit red rust while giving the blade a subdued black appearance.
The rugged black blade and the silver color of the sharpened edge create a beautiful contrast that enhances its presence as a tool.
With continued use and sharpening, the appearance of the black oxide areas will gradually change, which is part of the appeal unique to carbon steel knives.
Because this finish was not applied to a brand-new knife, the depth and distribution of the black color vary depending on the blade's original condition. Please enjoy its one-of-a-kind character.
