Kappabashi Yanagiba Knife
This is a Yanagiba knife from Kappabashi. The Yanagiba is a traditional Japanese sashimi knife with a long, thin blade designed for pulling clean slices. This is a relatively thin Yanagiba, about 3 mm thick, making it suitable for very fine cuts similar to a fugu-slicing knife. Some typical Hagane patina is present, but the sharpened edge reveals the bright silver of the steel.
The knife has a single-bevel Hagane (carbon steel) blade with excellent sharpness, ideal for sashimi preparation.
It has been sharpened, so it is ready to use immediately upon arrival. Please handle with care when unpacking. The price includes the sharpening fee.
It features the "河童ばし" (Kappabashi) engraving.
This Yanagiba is well suited for slicing sashimi at home or in a sushi restaurant, especially when very thin, delicate cuts are desired.
