Misono Honesuki Knife 135mm (Swedish Steel, Wooden Saya)

This is a Honesuki (boning knife) by Misono. Honesuki and boning knives are specialized blades for removing meat cleanly from bones. This piece appears to have been carefully used; the engravings have become faint due to maintenance. It is slim and easy to handle, ideal for delicate work around bones.

The blade is single-bevel Hagane (Swedish steel), with a sharp cutting edge suited to detailed boning work.

The knife has been sharpened and is ready to use immediately upon arrival. Please take care when opening the package. The listed price already includes the sharpening service. A wooden saya is included.

Although faded, it still bears markings such as “MISONO” and “SWEDISH STEEL.” This Honesuki is perfect for tasks such as breaking down poultry, trimming meat, and working close to bones with precision.

The sharp Swedish steel edge allows controlled cuts with minimal effort, reducing waste when trimming.
