A specialized single-bevel knife for scoring the fine bones of hamo (pike conger). Designed for precise, repetitive bone-cutting without severing the skin.
Hagane high-carbon steel for bite and control.
Excellent condition overall. Wooden saya is included but has a crack; consider it a bonus and reinforce with bands or tape if used. Professionally sharpened; ready to use on arrival. Please open with care. Sharpening fee included.
Engraved on both sides with “尚台正吉” (Syoudai Masayoshi) and logo marks.
