This is a Yanagiba knife by Seki Magoroku. Yanagiba knives are traditional Japanese blades used to create beautiful cross-sections when slicing sashimi with a single pulling stroke. This is a reliable Seki Magoroku Hon-Hagane model. There is some unevenness on the handle, but it does not affect use; and since Japanese handles are easy to replace, it can be changed if desired.
The knife has a single-bevel Hagane (Hon-Hagane carbon steel) blade with a very sharp cutting edge.
The knife has been sharpened and is ready to use immediately upon arrival. Please take care when opening the package. The listed price already includes the sharpening service.
It features engravings such as “関孫六” (Seki Magoroku), “銀寿” (Ginju), and “本鋼” (Hon-Hagane). This Yanagiba is well suited for sushi chefs and home enthusiasts who want to slice sashimi cleanly and present sushi toppings with a glossy, professional finish.
