Misono Sujihiki Knife 300mm

This is a Sujihiki knife by Misono. Sujihiki knives are slender Western-style slicers designed for trimming sinew and slicing roasted meats into thin slices. This is a Misono Salmon series Sujihiki with dimples, showing hardly any signs of use. It has been ground with an approximately 8:2 single-bevel-like edge, giving it a strong bias and making draw cuts particularly smooth.

The knife is made from double-bevel stainless steel (molybdenum steel), providing good rust resistance and easy maintenance.

The knife has been sharpened and is ready to use immediately upon arrival. Please take care when opening the package. The listed price already includes the sharpening service.

It carries “MISONO,” “HANDMADE,” and “ステンレスモリブデン鋼” (stainless molybdenum steel) markings and logos. The long, slim blade and dimpled surface make this Sujihiki ideal for carving roasts, slicing ham, or portioning large pieces of fish with minimal friction.

Its semi-single-bevel style edge provides the clean slicing feel of a Japanese blade while keeping the convenience of a Western stainless steel knife.
