Hon Kaneya Yanagiba Knife 240mm
This is a Yanagiba knife by Hon Kaneya. Yanagiba knives are traditional Japanese blades designed to slice sashimi beautifully in a single pulling motion. This piece is in clean condition with little sign of use.
The blade is single-bevel Hagane (carbon steel), offering a very sharp cutting edge.
The knife has been sharpened and is ready to use immediately upon arrival. Please take care when opening the package. The listed price already includes the sharpening service.
It bears the engravings “本カネヤ” (Hon Kaneya) and “特級” (Special Grade), and the handle includes a branded mark. This Yanagiba is well suited for preparing sashimi and sushi toppings, giving smooth, glossy cuts that highlight the freshness of the fish.
