Minamoto Takeaki Ai-Deba Knife
The Ai-Deba combines features of a Deba and a Yanagiba, making it a versatile Japanese knife for processing fish. Its intermediate shape balances power and slicing ability.
Single-bevel hagane high-carbon steel construction for sharpness and precise control.
Some natural patina is present, typical of carbon steel, but the sharpened edge shows a clean silver finish. The handle also retains a Sakai Cutlery seal. Professionally sharpened; ready to use on arrival. Please handle carefully when unpacking. Sharpening fee included.
Engraved with “源武昭” (Minamoto Takeaki); handle bears a “堺刃物” (Sakai Cutlery) seal.
A practical hybrid blade—ideal for sushi chefs and home enthusiasts who need one knife to both portion and slice fish.
Length: 285mm
Blade Length: 155mm
Blade Width: 46mm
Blade Thickness: 4-5mm
Weight: 207g
SHARPENED by a Japanese Sharpener. Razor sharp. The sharpener is in Kyoto, the traditional city in Japan as you know. You can use without maintenance. You don't need to pay maintenance costs after receiving. If any, please feel free to ask, English available.
