The Usuba is a single-bevel vegetable knife for katsuramuki peeling and decorative cuts that require precision.
Hagane high-carbon steel with a single bevel for crisp, controlled slices.
Some natural patina on the carbon steel, while the freshly sharpened edge shows bright steel. Professionally sharpened for immediate use; handle with care on unpacking. Sharpening fee included.
Engraved “源武昭” (Minamoto Takeaki); the handle retains a “堺刃物” (Sakai Cutlery) seal.
Ideal for chefs and enthusiasts who want accurate vegetable prep without switching to Western-style knives.
