Echizen Okumura Takohiki Knife
While the Yanagiba knife is the most famous for slicing sashimi, this is a Kanto-style sashimi knife known as a Takohiki. Despite its name, the Takohiki is not exclusively for cutting octopus.
The differences between the Yanagiba and Takohiki lie in the thinner blade and the flat tip of the Takohiki.
It excels at slicing sashimi, making it faster to work with than a Yanagiba, especially when handling large volumes. This overlooked knife deserves more recognition.
Made of carbon steel with a single-edged blade, it offers excellent sharpness.
The knife has been sharpened, so it is ready to use immediately upon arrival. Please handle with care when unpacking. The price includes the sharpening fee.
It features the engravings "越前奥村" (Echizen Okumura), "菊" (Kiku), and "本鍛錬" (Hon-tanren). This knife is also suitable for soba cutting. The handle has a branded mark, and the Sakai cutlery sticker is well-preserved.
