This is a Gyuto knife from Munefusa. The Gyuto is a versatile chef’s knife suitable for cutting meat and vegetables. This piece shows little sign of use and is easy to handle both in home and professional settings. The Hagane core is clad in jigane, forming a warikomi structure with some patina on the core steel that will gradually fade as the knife is sharpened in use.
The knife has a double-bevel Hon-Warikomi construction, with a Hagane core sandwiched by softer outer steel, balancing sharpness and ease of care.
It has been sharpened, so it is ready to use immediately upon arrival. Please handle with care when unpacking. The price includes the sharpening fee.
It bears engravings "登録" (Registered), "宗房作" (Munefusa-Made), and "本割込" (Hon-Warikomi).
