Sam is a professional chef working at a French/Kiwi restaurant in New Zealand.
This was Sam's third order from Yoichiro Knife. Thank you so much for your continued support.
A few weeks after the knives arrived, I asked Sam how they were working for him. He kindly replied with a wonderful message and shared many photos from his work.
He is currently carrying a 240mm yanagiba, a 330mm yanagiba, a deba, and a Tojiro 270mm gyuto in his work knife bag, using them in the kitchen every day.
What surprised me even more was that he had sharpened the 240mm yanagiba to 20,000 grit together with his friend. It was clear from his message and photos that he truly enjoys caring for and sharpening his knives.
The photos he shared included beautifully prepared dishes, as well as his Glestain knife bag and the knives he uses at work. Seeing Japanese knives being used every day in a restaurant all the way in New Zealand made me very happy.
It was also very encouraging to hear that he is still looking to add more knives for professional use to his collection.
