Hanagami Yanagiba Knife

The yanagiba is a traditional Japanese sashimi knife designed to create clean, beautiful slices with a smooth pull cut.

This knife is made of hagane (high-carbon steel) and is double-beveled. With the sticker still clearly remaining, it seems to be an old-stock stored item that was not used much. It may originally have had a kurouchi finish. There is darkening typical of carbon steel, but the sharpened edge shows a clean silver hagane surface.

It has been sharpened and is ready to use upon arrival. Please handle with care when unpacking. The price includes the sharpening service.

It features engravings “特撰” (Special Selection) and “花神” (Hanagami). The handle sticker also remains.

For sushi and sashimi, a yanagiba’s long pull cut helps keep the fish surface smooth—one reason sushi chefs value this style in sushi restaurants.
