Hisakatsu Deba Knife (Western Handle)

This is a Deba knife from Hisakatsu. It features a Western-style handle. As a Deba, it is designed for processing fish, but this example is relatively light for a Deba and easy to maneuver. Unlike typical Deba knives, it has no shinogi line, but it is still a single-bevel blade with a properly formed ura on the back.

The knife has a single-bevel Hagane (carbon steel) blade, providing a sharp edge suitable for filleting and processing fish. The Western handle makes it easy to grip, especially for users not accustomed to traditional Japanese handles.

It has been sharpened, so it is ready to use immediately upon arrival. Please handle with care when unpacking. The price includes the sharpening fee.

It is engraved with "特殊鋼" (Special Steel) and "久勝" (Hisakatsu), and the handle still has its original seal attached.

This Western-handled Deba is ideal for users who want a traditional fish knife for sashimi or sushi prep, but prefer the feel of a Western grip.
