Echigo Ittetsu Santoku Knife

This is a santoku knife from Echigo Ittetsu. The santoku is a versatile all-purpose knife that comfortably handles meat, fish, and vegetables, and its shape is easy to use in the home kitchen. The spine is thicker near the heel and tapers thinner toward the tip. Some of the original kurouchi finish has thinned with maintenance, but overall the knife has been well stored and remains in good condition.

The knife has a double-bevel Hagane (carbon steel) blade made with Aogami Yasuki steel, offering the keen sharpness characteristic of blue paper steel.

It has been sharpened, so it is ready to use immediately upon arrival. Please handle with care when unpacking. The price includes the sharpening fee.

It carries engravings "越後一鉄" (Echigo Ittetsu) and "青紙鋼" (Aogami Steel).

This Echigo Ittetsu santoku is ideal for users who want the cutting performance of Aogami steel in a compact, kitchen-friendly all-purpose blade.
