Misono Sujihiki Knife 225mm (Stainless, Special Steel)
This is a Sujihiki knife by Misono. It is a slim slicer type, suitable for slicing meat or fish. The blade had been sharpened with a slight single-bevel bias, around 7:3, and has been finished with that edge, making it particularly comfortable for draw cuts. It does not flex like a sole knife, and appears to have been carefully used and maintained.
The blade is double-bevel stainless steel (special steel), so it is rust-resistant and easy to maintain. The 7:3 edge gives it a semi-single-bevel feel and good slicing performance.
The knife has been sharpened and is ready to use immediately upon arrival. Please take care when opening the package. The listed price already includes the sharpening service. A wooden saya is included.
It bears markings and logos such as “MISONO” and “特殊鋼” (Special Steel). This Sujihiki is ideal for slicing steaks, roasts, and fillets with clean, controlled strokes, making it useful both in home kitchens and in professional settings.
