Misono Honesuki Knife 180mm (Swedish Steel, Spine Marks)

This is another Honesuki (boning knife) by Misono, well suited for deboning meat on the bone and breaking down chicken. There are hammer marks on the spine and a crack in the handle. These do not appear to cause major issues in use, but please confirm the condition before purchase. The price has been adjusted to reflect these points, making it a good value if they do not concern you.

The blade is single-bevel Hagane (Swedish steel), offering a sharp, precise cutting edge.

The knife has been sharpened and is ready to use immediately upon arrival. Please take care when opening the package. The listed price already includes the sharpening service. A wooden saya is included.

It features markings and logos such as “MISONO,” “Swedish Steel,” and “特別鍛造” (Special Forging). This Honesuki is well suited for home butchers and professionals who frequently break down poultry and other bone-in cuts, and who do not mind cosmetic imperfections.

The strong Swedish steel blade and pointed tip make it easy to follow joints and separate meat cleanly from bone.
