Sakai Ichimonji Mitsuhide Gyuto Knife 285mm
This is a Gyuto knife by Sakai Ichimonji Mitsuhide. Gyuto knives are Western-style chef’s knives suitable for handling meat, fish, and vegetables. On this piece, black rust has developed across much of the surface. However, as you can see from the sharpened edge, the cutting line shows a clean silver color. As long as the rust does not progress further, the knife can continue to be used while being maintained through sharpening. Because of the existing black rust, the price has been set very attractively.
The knife is double-bevel Hagane (carbon steel), offering sharp cutting performance and a solid construction.
The knife has been sharpened and is ready to use immediately upon arrival. Please take care when opening the package. The listed price already includes the sharpening service.
It features engravings and logos reading “登録” (Registered), “堺一文字光秀” (Sakai Ichimonji Mitsuhide), and “別上” (Special Grade). This long Gyuto is well suited to users who prefer a larger chef’s knife and are comfortable maintaining carbon steel in exchange for its excellent cutting feel.
