Kinboshi Yanagiba Knife 210mm

This is a Yanagiba knife by Kinboshi. Yanagiba knives are traditional Japanese blades suitable for producing beautiful, clean slices of sashimi and similar dishes. There is some typical darkening from carbon steel, but the sharpened edge shows a bright silver line.

The knife has a single-bevel Hagane (carbon steel) blade, known for its sharp and precise cutting performance.

The knife has been sharpened and is ready to use immediately upon arrival. Please take care when opening the package. The listed price already includes the sharpening service.

It bears the engravings “金星” (Kinboshi) and “手打” (Hand-Forged), and the handle also has a branded mark. This Yanagiba is well suited for slicing sashimi and preparing sushi toppings, providing the crisp cutting feel that many sushi chefs prefer.
