Masamoto Hamo-Kiri Knife 240mm
This is a Hamo-kiri knife by Masamoto. Hamo-kiri knives are specialized professional blades used for bone-cutting tasks on pike conger (hamo) and eel. This Masamoto-brand Hamo-kiri has been carefully used and well maintained. The back side of the blade has a semi-mirror-like finish.
The knife is made with a single-bevel Hagane (carbon steel) blade, providing an extremely sharp edge suitable for precise bone-cutting work.
The knife has been sharpened and is ready to use immediately upon arrival. Please take care when opening the package. The listed price already includes the sharpening service.
It bears the engravings “正本” (Masamoto) and “秀” (Shu). This specialized knife is intended for expert preparation of hamo and eel, including the fine bone-cutting technique often seen in high-end kaiseki and sushi restaurants.
