Hagane high-carbon steel for incisive cutting performance.

Not sharpened by our shop; previously sharpened and in clean condition with no notable chips.

Engravings and logo marks read “尚台正吉” (Syoudai Masayoshi) on both sides.

Purpose-built for eel prep—precise control for clean, even fillets.
