This is a Nakiri knife by Izutsuki Kiya. Nakiri knives are double-bevel Japanese vegetable knives ideal for tasks such as mincing cabbage and cutting root vegetables. This is a clean kuro-uchi Nakiri, in good condition and ready for many more years of use. The combination with a water buffalo horn handle further enhances its appeal.
The blade is double-bevel Hagane (carbon steel) made from Yasuki Aogami steel, known for its excellent sharpness and edge retention.
