Yoshimori Deba Knife 155mm
This is a Deba knife by Yoshimori. Deba knives are thick-bladed Japanese knives ideal for removing fish heads and cutting through bones. This piece has a beautiful white water buffalo horn handle and remains in very clean condition with minimal darkening typical of carbon steel.
The knife has a single-bevel Hagane (carbon steel) blade with a very sharp cutting edge. Combined with the white buffalo handle, it has an upscale, traditional appearance.
The knife has been sharpened and is ready to use immediately upon arrival. Please take care when opening the package. The listed price already includes the sharpening service.
It bears the engravings “登録” (Registered) and “義盛作” (Yoshimori Saku). This Deba is ideal for preparing fish for sashimi or sushi, from removing the head to portioning fillets, while also giving a refined look suitable for professional sushi counters.
