Kikusue Deba Knife 155mm
This is a Deba knife by Kikusue. It has a slightly slender Funayuki-style shape, making it easy to handle for both filleting fish and performing finer tasks. The white water buffalo horn handle is clean and attractive. There is some typical darkening from carbon steel, but the sharpened edge shows a bright, clean silver line.
The knife has a single-bevel Hagane (carbon steel) blade with a very sharp cutting edge. The white water buffalo handle enhances its classic Japanese appearance.
The knife has been sharpened and is ready to use immediately upon arrival. Please take care when opening the package. The listed price already includes the sharpening service.
It bears the engraving “菊季” (Kikusue). This Deba is ideal for filleting fish for sashimi or preparing fish portions for sushi, especially for users who prefer a slightly slimmer blade that feels agile on the cutting board.
The combination of a traditional single-bevel edge and elegant white buffalo horn handle makes it suitable both for home use and for sushi chefs who value appearance as well as function.
