This is a Western Deba knife by Minamoto Masayuki. Western Deba knives are versatile Western-style blades with enough thickness to handle fish prep while still functioning broadly like a Gyuto. This piece appears to have been used with a full black-rust treatment across the surface to protect the Hagane from corrosion, so the steel itself remains in very good condition. The polished edge, where the black rust has been ground away, shows a clean silver color as can be seen in the photos. It has been carefully used and shows a good, well-aged patina. The combination of kuro-uchi and black-rust finish gives it a distinctive and atmospheric look.
The knife is a double-bevel Hagane (carbon steel) blade with a powerful cutting edge. It has been sharpened with an approximately 8:2 bias, creating a semi-single-bevel balance that makes draw cuts smooth and efficient.
The knife has been sharpened and is ready to use immediately upon arrival. Please take care when opening the package. The listed price already includes the sharpening service.
