Verdun Yanagiba Knife
The Yanagiba is ideal for sashimi and thin slices of fish. This piece has been maintained as a near-single bevel (around 9:1) and finished accordingly. Although called Yanagiba officially, it can also be used for slicing meats like a Sujihiki. Made from single-edged stainless steel, it is rust-resistant and easy to maintain.
The knife has been sharpened, so it is ready to use immediately upon arrival. Please handle with care when unpacking. The price includes the sharpening fee.
It features faint engravings of "Verdun."
