Tojiro Mi-Oroshi Knife
This is a Mi-Oroshi knife from Tojiro. The Mi-Oroshi is a traditional Japanese fish-processing knife that combines characteristics of both a Deba and a Yanagiba, allowing you to fillet fish and slice portions with a single blade. This piece shows very little signs of use and appears to have been stored carefully rather than used heavily.
The knife has a single-bevel Hagane (carbon steel) blade, offering excellent sharpness and bite on the cutting edge.
It has been sharpened, so it is ready to use immediately upon arrival. Please handle with care when unpacking. The price includes the sharpening fee.
It features the "藤次郎" (Tojiro) engraving.
This Mi-Oroshi is ideal for cooks who often break down whole fish and want one traditional Japanese blade that can both fillet and portion sashimi-style slices.
