Kanesada Tako-Hiki Knife 220mm

This is a Tako-Hiki knife by Kanesada. The Tako-Hiki is a type of sashimi knife mainly used in the Kanto region, characterized by its long, narrow blade that is ideal for slicing sashimi and octopus. This piece is made from clean Hagane steel and shows very little sign of use.

The knife has a single-bevel Hagane (carbon steel) blade, offering a very sharp edge and a smooth, controlled drawing feel when slicing.

The knife has been sharpened and is ready to use immediately upon arrival. Please take care when opening the package. The listed price already includes the sharpening service.

It features engravings “登録” (Registered) and “兼定” (Kanesada). The long, straight edge is excellent for creating even sashimi slices and thin octopus pieces for sushi platters, making it a suitable choice for professional sushi chefs and serious enthusiasts alike.
