This is a kuro-uchi Aji-Kiri knife, a small deba-style knife designed for filleting small fish such as horse mackerel. The blade on this piece is finished with a double bevel, making it easy to handle comfortably in either the left or right hand.
It is a thin and nimble kuro-uchi blade, so it handles very smoothly on the cutting board.
The knife is made from double-bevel Hagane (carbon steel), offering a very sharp cutting edge.
