Yasuyuki Hon-Yaki Fugu-Hiki Knife
The Fugu-Hiki knife is a type of Yanagiba knife designed for thin slicing, especially for preparing fugu (pufferfish) sashimi. Its slender and sharp blade allows for precise and delicate cuts, making it a favorite among professionals.
This knife is single-edged and made of high-carbon steel, providing exceptional sharpness. It is in near-unused condition and features a hon-yaki (true-forged) construction. The blade is 1 shaku (approximately 30 cm) long, weighs only 149g, and has a thin profile with a blade thickness of about 3mm. The blade pattern is beautifully visible on both sides.
The knife has been sharpened, so it is ready to use immediately upon arrival. Please handle with care when unpacking. The price includes the sharpening fee.
It features the engraving "康之" (Yasuyuki), and the handle end bears the "山房" (Yamabo) logo. A wooden sheath is included.
