KNIFE SHOP DEADSTOCK brings together Japanese knives that were kept as inventory by knife shops and never owned or used by an end customer.

These knives were no longer offered for sale for various reasons, including model changes, discontinued product lines, changes in specifications or packaging, and inventory replacement. Since they have never been used in a home or professional kitchen, there is no blade wear from use.

When we acquire them, some may have rust, dark stains, dirt, small scratches, or damage to the box or accessories from storage. YoichiroKnife performs the necessary maintenance on every knife. All rust is removed, and each knife is individually inspected to make sure that it works properly and is ready for practical use.

This selection includes not only rare brands and discontinued knives, but also newer knives that were no longer sold after a model change.

Any dark stains, small scratches, storage marks, differences in finish, or damage to the box or accessories that remain after maintenance are shown in the product photos and explained on each product page.
