Holly is a restaurant owner in London. Holly discovered Yoichiro Knife in February while searching for pre-loved Japanese knives instead of buying new ones, drawn to the idea that each knife had already had a previous life and owner.

Holly and the chefs at the restaurant have been buying knives from Yoichiro Knife and using them in their professional kitchen. This was Holly’s second order, which included a Ujifusa Yanagiba, Sekimagoroku Santoku, and Enjutaro Kunimura Deba.

The restaurant has a large open fire and a seasonally changing menu with global cuisine. It is wonderful to see pre-loved Japanese knives finding a new life in a professional kitchen in London.
