Hidekane Yanagiba Knife
This is a yanagiba knife by Hidekane.
The yanagiba is a traditional Japanese knife designed for slicing sashimi with a long, single pulling motion. This is a clean example with very little sign of use. With a 240mm blade, it is long enough for professional use and well suited to preparing sashimi from many kinds of fish.
This knife is single-beveled and made of hagane (carbon steel), offering excellent sharpness.
A 240mm yanagiba is a very practical size for sushi chefs, sashimi service, and sushi restaurant prep where smooth, uninterrupted cuts matter.
The knife has been sharpened, so it is ready to use immediately upon arrival. Please handle with care when unpacking. The price includes the sharpening fee.
It features the engravings "登録" (Registered) and "秀兼" (Hidekane). The handle also bears a branded mark.
