Tojiro Petty Knife
A petty knife is ideal for peeling fruit, general prep work, and fine detail tasks such as garnishes and decorative cutting.
This knife is double-beveled with a warikomi (clad) construction. It appears to have originally been a gyuto, but it has been shortened and serviced into a larger petty-knife style.
It has been sharpened and is ready to use upon arrival. Please handle with care when unpacking. The price includes the sharpening service.
It features engravings “スウェーデン鋼割込” (Swedish Steel Warikomi) and “本職用” (For Professional Use). The Tojiro marking has faded due to use and maintenance and cannot be clearly confirmed, but it is a Tojiro item.
A “converted” longer petty like this can be a very practical in-between size—more reach than a small utility knife, but still quick and controlled for close work.
