Izutsuki Kiya santoku.
A santoku is a versatile knife used for preparing meat, fish, vegetables, and many other ingredients. This is an Izutsuki Kiya #3 santoku.
The black areas of the blade have been given a black oxide finish.
A black oxide finish forms a stable oxide layer on the iron surface, helping to inhibit red rust while giving the blade a subdued black appearance.
The rugged black blade and the silver color of the sharpened edge create a beautiful contrast that enhances its presence as a tool.
With continued use and sharpening, the appearance of the black oxide areas will gradually change, which is part of the appeal unique to carbon steel knives.
