Azuma Minamoto Seiryu Sujihiki Knife.

The Sujihiki has a slim, Gyuto-like profile and is used for cutting meat along the grain and slicing roasts and other large cuts thinly. The black areas of the blade have been given a black oxide finish.
A black oxide finish forms a stable oxide film on the iron surface, helping to inhibit red rust while giving the blade a subdued black appearance.
The rugged black blade and the silver edge revealed by sharpening create a striking contrast that enhances its presence as a tool.
As the knife is used and sharpened, the appearance of the blackened areas will gradually change, another appeal unique to carbon steel knives.
The black oxide finish was not applied to a new knife, so the depth and distribution of the black color vary according to the blade's original condition. Please enjoy the one-of-a-kind character of this item.
