This is a santoku knife by Hagakure.
The santoku is a versatile knife suitable for meat, fish, and vegetables. Dewa Steel has a very high carbon content of about 1.4%, making it an exceptionally hard material that requires advanced heat-treatment skill. Even today, when production is highly mechanized, only experienced craftsmen can truly handle this material well. This knife is clearly a handmade piece. It shows only light use and little blade wear, and it remains in very good condition.
This knife features double-edged warikomi construction, combining sharpness with ease of use.
Its handmade feel and high-performance core steel make it especially appealing to users who value craftsmanship and a crisp, responsive cutting edge.
