This is a yanagiba knife by Kikutake.
The yanagiba is a traditional Japanese sashimi knife used with a long pulling cut for clean slices. This piece has a beautiful water buffalo handle. With a 240mm blade, it is a serious knife suitable not only for home use but also for professional work.
This knife is single-beveled and made of hagane (carbon steel), offering excellent sharpness.
Its longer blade is well suited to sashimi, sushi prep, and professional fish slicing where a smooth single-stroke cut is important.
The knife has been sharpened, so it is ready to use immediately upon arrival. Please handle with care when unpacking. The price includes the sharpening fee.
It features the engravings "菊武別打" (Kikutake Custom Forged) and "安来鋼" (Yasuki Steel).
