Azuma Masatsugu Takohiki Knife
The Takohiki is a traditional Kansai-style sashimi knife designed for drawing clean slices of sashimi with its long, narrow blade. This is a very beautiful piece with a water buffalo handle that appears to have seen little to no use. The blade face has been polished to a mirror finish. Knife oil has been applied for storage, so the mirror surface may appear cloudy at first. Washing lightly with dish soap will restore the original finish.
Mirror or semi-mirror finishes are often applied only to parts of the blade rather than the entire surface. Please check the photos for the condition. As this knife is finished by hand, very small scratches may remain, which are part of the character of handcrafted work.
This knife is single-edged and made of carbon steel, offering excellent sharpness.
Professionally sharpened and ready to use. Sharpening service is included in the price. Please handle with care when unpacking.
