Yoshizane Honesuki Knife

A honesuki is designed for working around bones and trimming sinew, and it is also used for garasuki / sabaki-style butchery tasks.

This knife is single-beveled and made of hagane (high-carbon steel). Although it is a stored item, it is in exceptionally clean condition.

It has been sharpened and is ready to use upon arrival. Please handle with care when unpacking. The price includes the sharpening service.

It features engravings “登録商標” (Registered Trademark), “吉實” (Yoshizane), and “日本鋼” (Japanese Steel).

A carbon-steel honesuki is prized for its strong “bite” into connective tissue, making it especially satisfying for breaking down poultry and trimming close to the bone.
